KEY RESPONSIBILITIES:

•Support and collaborate with the team to produce lavish buffets and elaborate banquet menus in Conference and Events

•Assist the team in demonstrating flair to brainstorm and create new items for our guests

•Ability to interpret event orders and deliver based on the clients needs

•Actively promote and participate in teamwork and positive communication with the kitchen and other departments

•Ensure food standards, preparation, presentation and cooking techniques are established and monitored to meet Sofitel Brand Standards guidelines

•Ensure highest level of hygiene is practised to meet Health & Safety regulations and HACCP food preparation guidelines

•Ensuring food safety logs and requirements are met at all times  

•Work with and coordinate the work of Apprentice Chefs in the preparation and production of food as required. 

•Ensure strict stock rotation and minimum wastage, whereby you will be responsible for implementing and maintaining stock control procedures. 

•Ensure all equipment is maintained, serviced and cleaned.

KEY RESPONSIBILITIES:

• Organise an assigned section and ensure it runs efficiently and productively.
• Ensure all food produced is in line with kitchen recipes and standards.
• Prepare and cook all food orders with a sense of urgency.
• Monitor daily kitchen food and product requirements and advise the supervisor of these well in advance. 
• Monitor food preparation and wastage costs - contribute to controlling these by following efficient preparation methods and standard recipes.
• Assist with training apprentices to desired standard this includes full working knowledge of the section and department.
• Ensure all required tasks are competed accurately and within given time frames.
• Be familiar with the other kitchen sections, promoting flexibility and productivity.
• Ensure all kitchen appliance maintenance, crockery, glassware, cutlery and any other operational breakages are recorded.
• Ensure all kitchen equipment is kept in good working order.
• Ensure service equipment and storage areas are properly secured at the end of each shift.
• Meet and exceed, where possible customer/guest expectations enabling the Hotel restaurant and conferencing areas to be recognised as a purveyor of consistent, value for money and quality cuisine.
• Ensure food standards, preparation, presentation and cooking techniques are established and monitored to achieve food service standards.  Work with the F&B Service team and take corrective action where appropriate when standards are not met.
• Check all food is stored and handled as per current food health & hygiene (HACCP) regulations

The Position:
The Chef Supervisor is responsible for the daily operational management of the Catering Department and all food services personnel within the facility. Key Duties and Responsibilities:

• Menu planning in consultation with residents / representatives, dietitian, RN in Charge and General Manager to ensure adequate nutrition and hydration standards are maintained for residents.
• Maintain a record of residents' needs, preferences and assistive devices and ensure these are provided.
• Documentation of recipes for menu dishes and special dietary requirements. Ensures recipes cater for cultural and spiritual requirements and for special occasions.
• Ordering of supplies, ensuring adequate supplies according to menu and budget.
• Documentation, implementation, monitoring and evaluation of the Food Safety Program.
• Follow up on resident complaints and feedback.
• Preparation and cooking of meals according to the menu and Food Safety Program.
• Contribute to management meetings and strategic planning.
• Participate in relevant professional development and mandatory training.
• Ensure that expenditure is in accordance with approved budgets.
• Ensure rostering and leave arrangements are structured to ensure that the Catering Department is adequately staffed, and appropriate skill levels are considered.
• Ensure all direct employee reports are made aware of their policy, legislative and other relevant compliance obligations from the commencement of their employment with the organization.
• Conduct regular meetings with Catering Department employees to discuss relevant workplace issues such as quality and work health and safety.

To excel in the Chef Supervisor role, the following criteria are essential:

• Trade Cook Certificate or equivalent.
• Food Handling Course.
• Current Food Safety Supervisors Certificate.
• Experience in hospitality.
• Current National Police Certificate (or ability to acquire)
• Experience is residential aged care.
• Computer literacy skills - medium level.

Catering is a key component of the service we provide to our aged care residents at Brigidine House. 

Brigidine House, located in Randwick, is conveniently a short drive to Coogee Beach and a 5-minute walk to public transport. We operate a 30-bed Residential aged care service and provide a home like community for our residents.

As a member of the Leadership Team at Brigidine House, you will be preparing meals for our residents and managing an established team of catering assistants. This role includes overseeing effective meal service to our aged care residents, as well as providing best practice service in kitchen cleanliness, documentation and food preparation.

To be successful in the role, you will have:

• Certificate IV in Commercial Cookery or equivalent (essential)
• Previous experience in managing a kitchen and kitchen staff
• Previous experience in an Aged Care environment, highly desirable
