SUMMARY:

Our client, Chum Chum's Pty Ltd, located in the heart of Clayton, VIC, is a leading restaurant offering a unique blend of modern Sri Lankan and fusion cuisine. Renowned for its innovative menu and dedication to culinary excellence, Chum Chum's has established itself as a go-to destination for food enthusiasts. They are currently seeking an experienced Chef to join their dynamic team and contribute to their continued success.

The typical job responsibilities will include, but are not limited to the following:

- Plan and design menus that reflect Sri Lankan and fusion cuisine.
- Estimate food and labour costs to maintain budget control.
- Order necessary food supplies and ingredients.
- Monitor the quality of dishes throughout preparation and presentation.
- Collaborate with Managers and staff on food preparation and service.
- Demonstrate advanced cooking techniques to kitchen staff.
- Advise on and implement efficient cooking procedures.
- Ensure all dishes meet hygiene and safety regulations.
- Prepare and cook dishes to meet high standards.
- Develop and refine recipes for new menu items.
- Train and mentor junior kitchen staff.
- Oversee kitchen operations during peak service hours.
- Coordinate with suppliers for the timely delivery of fresh ingredients.
- Maintain cleanliness and organisation within the kitchen area.
- Ensure compliance with food safety standards.
- Manage inventory and reduce food wastage.
- Innovate and introduce new culinary trends into the menu.

Applicants must meet the following minimum requirements to be considered for the role:

- Minimum of 2 years’ experience in a professional kitchen environment.
- Cert IV in Cooking or equivalent culinary qualification.
- Proven expertise in Sri Lankan and fusion cuisine.
- Ability to manage kitchen operations effectively under pressure.
- Strong leadership skills with experience in staff training.
- Knowledge of food safety regulations and kitchen hygiene standards.
- Excellent communication skills to liaise with staff and suppliers.
