On behalf of Mantarays Ningaloo Beach Resort ( SBRM Management ) we are looking for Chef de Partie.
Tasks & Duties:
The industry description of a Chef de Partie or equivalent, is a person who has completed an apprenticeship or passed the appropriate trade test and who is engaged to perform general or specialised cooking, butchering, baking or pastry cooking duties and who performs any of the following:
• General and specialised duties, including supervision or training of kitchen employees; or
• Ordering and stock control; or
• Supervising kitchen employees in a single kitchen establishment.
The Chef De Partie (CDP) is responsible for supporting the Head and Sous Chef in the busy resort kitchen, delivering consistently high-quality food, handle purchase orders and ensure that items arriving without authorisation are not received. They must be knowledgeable about the section they oversee as well as how the kitchen functions as a whole. Being organised and able to work in fast-paced, high-pressure situations is very important. In the kitchen, the CDP’s oversee the Demi and Commi chefs, or Cooks.
The CDP’s ensure the highest standards and consistent quality in daily preparations for food services and keeps up to date with the new products, recipes and preparation techniques.
Skills and experience:
Trade qualification in Commercial Cookery (equivalent experience will be considered on a case by case basis by the Head Chef, Operations Manager and HR).
• At least 3 year's recent experience cooking in a well-established restaurant or full-service hotel and/or minimum of 1 year in a supervisory role.
•Ability to operate and work well under pressure.
• In-depth knowledge of the standards of baking, cooking and grilling techniques.
• Demonstrate good cooking techniques and advise on cooking procedures.
• Have proven knowledge and experience in menu creation, whilst maintaining quality and controlling costs in a commercial restaurant.
• Supervise, train and coordinate the activities of the other Chefs, Cooks and other Kitchenhands or food preparation workers.
• Effective communication skills and ability to speak, understand and write the English language fluently.
• Good organisational skills and methodical in approach to work routines.
• Sound knowledge of current food health regulations and Occupational, Health & Safety (OH&S) requirements.
• Possess a positive and proactive approach to supporting guest satisfaction at the resort.
• Demonstrate a high standard in personal presentation and kitchen cleanliness standards at all times.
• Be physical and medically fit to perform the requirements of the role, which includes the ability to stand for extended periods.
• Current Australian Driver’s Licence (without restrictions) and to have their own vehicle (for travel to the resort from the Exmouth townsite, approx. 5km)
• Be a permanent resident of Australia or already hold the necessary immigration status to work in Western Australia for an extended period.
Australian Hotels Association (AHA), Western Australia (WA) Hospitality Hygiene for Food Handler’s Course (mandatory qualification required from 8 December 2023). This qualification is required prior to commencing work at the resort
