Job Description
The role of Kitchen Assistant Manager is to lead the kitchen and production for our meal services at Spitfire as well as provide skills support to our Apprentices and kitchen hands on the job.
Note: Some flexibility in scheduling will be necessary for week-to-week scheduling. Evening shifts and weekend availability is necessary. Average schedule will be -Thursday to Monday
Responsibilities include but are not limited to
• ? Execute and supervise food prep and dish plating during lunch and evening service.
• ? Organize prep lists and tasks for line cooks and kitchen hands working in our kitchen.
• ? Maintain high standards of cleanliness, food quality, and behavior.
• ? Assist in improving upon documentation and structure for kitchen operations, including recipe and recipe cost management, inventory tracking, scheduling, ordering, prep and planning.
• ? Assist in fulfilling orders for Kitchen
• Manage kitchen staff and coordinate food orders
• Supervise food prep and cooking
• Check food plating and temperature
? Ensure health and safety standards are exceeded each day.
Candidate Requirements
• ? Culinary experience: This is a fast-paced production management role. You are helping train not learning kitchen basics yourself. Must bring kitchen management experience and love to cook.
• ? Compassionate, patient mentorship: You will be supporting Apprentices with minimal kitchen experience. This is a great opportunity for someone who loves to teach and support personal and professional growth.
• ? High standards of cleanliness and organization: No exceptions.
