A family business through and through, Prendiville Group owns and operates 21 iconic tourism, hospitality and entertainment facilities across three states. We are thrilled to be providing a fabulous opportunity to join a great team. Hotel Rottnest and Samphire Rottnest, located on the premiere tourist destination Rottnest Island, are well known for offering a unique experience with amazing views over Thomson Bay.
Samphire & Hotel Rottnest are currently looking for a Senior Duty Manager (F&B) to join their team on a full-time basis on Rottnest Island.
Primary Objectives:
- To assist the Venue Operations Specialist and Venue Manager in the overall operational and fiscal management of Hotel Rottnest.
- Oversee the stock control procedures for HR including ordering using the Buy Force system, stock counts, investigating discrepancies and variances, and also assisting Bayside and Lontara in their ordering, counting and control.
- To control wages and related expenses in line with budget and forecast expectations to produce required GOP.
- Oversee daily operations, ensuring employee productivity, monitoring efficiency of all processes, and creating a positive work environment for employees.
Tasks & Duties:
- Work, and develop relationships, with external suppliers to ensure the very best reputation within the industry, and receives the service required to ensure that the operational Food and Beverage team can deliver the highest quality product, and the highest financial return.
- Work closely with the Venue Manager, Venue Operations Specialist and Lontara Beverage Manager & Stores team to ensure correct stock levels are available and to assist the operational Food and Beverage team.
- Ensure strict compliance with all relevant Hygiene and Safety legislation and requirements.
- The job holder will manage Health & Safety, ensuring there is strict compliance with all legislation.
- Champion a training culture within the Food and Beverage team to ensure success and a culture that exceeds the very best the industry has to offer.
- Will constantly review the product range to ensure that all key quality standards are maintained.
- Maintain close, professional, effective links with all. They will ensure that suppliers deliver to stated agreements, best practices are followed, and technological advances are sought.
- The job holder will be responsible for maintaining and helping enforce the agreed brand standards.
- They will also liaise with the Sales and Marketing team to collate and respond to all customer correspondence, ensuring this is communicated to the entire Food and Beverage team, where appropriate.
- Will assist in budgeting/forecasting and be required to operate within efficient labour budgets for each season, tracking labour spending and providing input regarding capital projects and initiatives.
- To provide constant leadership, counselling, advice and feedback to their peers.
- They must provide an environment of openness and trust, with constant feedback and performance coaching.
Skills & Experience:
1. At least 3 years relevant experience
2. At least a diploma or higher in a relevant qualification
3. Be able to work in a high-volume, high-pressure environment
4. Have the ability to keep a calm presence in stressful situation
5. Have a passion for delivering the highest level of customer satisfaction
6. Work well with a seasonal team
7. Have strong leadership skills
8. Excellent communication and interpersonal skills
9. Time management and multi-Tasking
10. Ability to live and work on Rottnest Island.
Salary starts at $75,000 per annum.
