• Lead a kitchen team with clarity, direction, enthusiasm and a hands on approach

• Maintain a safe and hygienic working environment, to include proper storage of food, equipment, utensils and implements 
• Ensure, daily temperature checks of fridges, freezers, storage areas, deliveries and recording assessment where necessary 

What you will bring:

• A formal qualification in commercial cookery would be an advantage 
• Previous experience in a Lead or Head position in a restaurant, club kitchen, resort or bistro.
• Leadership experience in supervising other cooks and kitchen employees

What you’ll do:

Reporting to the Head Chef this full-time role will work predominately at the newly refurbished Derwent Bridge Hotel kitchen. This space has been custom designed to allow our kitchen Team to efficiently produce high quality meals not only for Derwent Bridge customers but the guests of Pumphouse Point too. You will work a variety of shifts from production (prep for Pumphouse Point), a la carte menus as well as functions and groups. Lead the opening of our newly renovated and renamed, Tides Kitchen and Bar!

Reporting to the General Manager, we are seeking an experienced Head Chef to join our team at Angourie Resort in this full-time role. You’ll be at the helm reopening our revamped and renamed, Tides Kitchen and Bar. You'll use your energy, experience and creativity to help build the identity of our restaurant through menu creation and by leading and developing your Kitchen team.

You’ll work closely with our General Manager and Restaurant Manager to ensure our guests have a great dining experience. You will also form part of the Resorts head of department structure to collaborate, communicate and lead consistency across all areas.

Serving modern Australian cuisine with fresh local seafood you’ll curate a la carte delights for Tides Kitchen and Bar, our Pool Bar and Room Service menus. You'll also play a key role in the many functions and events that take place at our Resort.

What you’ll do:

You may work in a variety of our dining venues, providing exceptional service with a warm welcome. You’ll treat our guests and customers as individuals, offering tailored options and solutions with a resilient and can-do attitude. On a daily basis you will:

• Undertake general or specialised cooking, baking, pastry cooking or butchering duties, as required​ to a high standard
• Monitor the hygiene of food preparation areas and equipment
• Under the direction of the Head or Executive Chef, you will be responsible for kitchen management including portion and stock control and for the supervision and training of other kitchen staff.

The Resort offers a large range of camp/caravan sites and accommodation options, from Beachfront Villa’s, to Glamping Tents.  We offer a multitude of facilities for the young and young at heart; resort style pools, Bear Grylls Survival Academy, licenced on-site dining options and conference/events/wedding facilities.  As we are located in national park, this is not a pet friendly park BUT there is the opportunity for a daily mingle with the free roaming Kangaroos. 

You will have a flair and passion for modern Australian dining, impeccable presentation and leadership qualities to motivate and direct your team.  You’ll oversee multiple dining outlets from our Bistro, Skippy’s Takeaway as well as our events and conference centre.  

What you will do: 

You will work closely with our Resort Manager and Food and Beverage Manager to ensure our guests receive, good, honest, food - the opportunities are endless! 

• Lead a kitchen team with clarity, direction, enthusiasm and a hands on approach 
• Ensure all aspects of food preparation, cooking and presenting of dishes according to company guidelines and customer preferences  
• Effective management of the department roster  
• Effective management of waste, portion sizing and menu preference offerings  
• Ordering of food products to ensuring consistent menu availability.  
• Cost analysis and menu planning to ensure the resort food cost & KPI's are achieved 
• Look to source local and cook fresh  
• Oversee and manage the food offering for events and functions
• Liaise with food service and restaurant management regarding customers order and general service of kitchen operations  
• Maintain a safe and hygienic working environment, to include proper storage of food, equipment, utensils and implements  
• Ensure, daily temperature checks of fridges, freezers, storage areas, deliveries and recording assessment where necessary  

What you will bring: 

• A formal qualification in commercial cookery is essential. 
• Previous experience in a Lead or Head position in a restaurant, club kitchen, resort or bistro. 
• Strong experience in events and functions 
• Current 'Food Safety Supervisor' certification  
• Experience in ordering and stock control 
• Effective verbal communication skills 
• Willing to be part of a greater team and jump in to assist the team and lead from the front

What you’ll do:

We are seeking an experienced, passionate and innovative Head Chef to join our team at Freycinet Lodge in this full-time role. You'll use your experience and creativity to build the identity of our venues from collaborative menu development, through to hiring, onboarding and developing your kitchen team. On a daily basis you will:

• Ensure and partake in the smooth running of kitchen operations to deliver a high standard of dining to our guests
• Maintain administrative tasks such as time and attendance and invoicing
• Communicate effectively and collaborate with other Department Heads 

What you’ll bring:  

• Extensive hands-on experience in kitchen operations with a clear understanding of the logistics of restaurants and functions catering
• Demonstrated experience in innovative menu planning and design, and producing and presenting food in line with current trends with a concern for competing against a standard of excellence
