Scope of the role:
- Lead the team to facilitate the smooth operation of the kitchen in accordance with company standards.
- Contribute to the development and execution of compelling, well-received menu concepts.
- Participate in the establishment and upkeep of protocols and guidelines.
- Collaborate with the Head Chef to uphold the consistent delivery of top-tier dishes.
- Estimate and conduct precise monthly inventories of food supplies.
- Aid in the oversight of food expenses and waste management.
- Analyse recipes to assign menu item prices based on food, labour, and overhead costs.
- Supervise and maintain adherence to food safety and occupational health and safety regulations.
- Determine production schedules and staff requirements necessary to ensure the timely delivery of services.
- Collaborate with other Head Chefs to plan and develop recipes and menus, taking into account such factors as the seasonal availability of ingredients and the likely number of customers.
- Supervise cooks and assist Head Chefs in preparing food and helping other team members when needed.
- Inspect supplies, equipment, and work areas to ensure conformance to established standards.
- Monitor sanitation practices to ensure that employees follow standards and regulations.
- Demonstrate new cooking techniques and equipment to staff.
To be considered for this role, you should
- Certificates III & IV in Commercial Cookery from Australia
- Have at least 2 years of work experience as a Chef in a similar cuisine
- Good knowledge of occupational health and safety (WHS) and HACCP.
- Ability to work in a team.
- Excellent communication skills.
- Be willing to relocate if you are interstate or in other cities.
