POSITION SUMMARY:
We are seeking a passionate and skilled Chef to join our culinary team at Fergusson Restaurant and Winery. The ideal candidate will have a strong background in cookery, with a Certificate IV in Cookery and 2-3 years of experience in a similar role. You will be responsible for preparing and delivering exceptional dishes that celebrate the essence of the Yarra Valley, working closely with our local suppliers to ensure the highest quality ingredients.
KEY RESPONSIBILITIES:
Menu Development & Execution: Collaborate with the Head Chef to develop and execute a menu that showcases seasonal produce and embodies the unique flavours of the Yarra Valley.
Food Preparation & Cooking: Prepare, cook, and present high-quality dishes consistently, ensuring that all food is prepared to the highest standards of taste, presentation, and hygiene.
Ingredient Sourcing: Work closely with local farms and artisans to source the freshest ingredients, ensuring that each dish reflects the seasonal bounty of the region.
Kitchen Management: Assist in the daily management of the kitchen, including inventory control, stock ordering, and maintaining a clean and organised work environment.
Team Collaboration: Work collaboratively with the kitchen and front-of-house teams to ensure seamless service, maintaining open communication and a positive work environment.
Health & Safety Compliance: Adhere to all health and safety regulations, ensuring that the kitchen operates in compliance with food safety standards.
Catering & Events: Contribute to the preparation and execution of catering services for special events, including weddings, corporate functions, and other celebrations hosted at Fergusson Winery.
REQUIREMENTS:
Australian Citizens and Permanent Residents are encouraged to apply.
Certificate IV in Cookery or equivalent qualification.
2-3 years of experience working as a Chef in a high-quality restaurant environment.
Strong knowledge of modern Australian cuisine with an appreciation for Italian gastronomy.
Experience in menu development and a passion for working with fresh, seasonal produce.
Excellent culinary skills, with attention to detail and presentation.
Ability to work effectively under pressure and manage multiple tasks simultaneously.
Strong communication and teamwork skills.
