Bluestone American BBQ in Coburg is looking to hire two qualified and experienced Chef’s to join our team on a full-time basis. The salary on offer is $70,000 - $75,000 p.a., depending on experience, plus superannuation.

Position Objective
Bluestone American BBQ features a Latin American spin on authentic low and slow traditions from the US BBQ belt.

As a Chef at Bluestone you'll be integral to our kitchen operations as the business expands to incorporate a new site, with a specific focus on the consistent preparation and delivery of our menu to an exceptional standard. Knowledge of and experience in both North American BBQ and Latin American cuisines is essential to your ability play a supportive role in growing our business. Experience working as part of a kitchen team is also a must, as you will assume responsibility for the day-to-day management of kitchen operations.

Essential Skills:

Has at least 2 years experience working with an American offset smoker, and is able to regulate temperature of woodfire
Has intimate knowledge of, and experience producing, North American and Latin American cuisines, with a specific focus on BBQ styles the Southern states of the USA, Argentina/Uruguay, and Columbia
Experience working as a part of a kitchen team
At least 2 years experience working in a fully licensed restaurant with full table service
Has a solid understanding of food health, safety and handling procedures

Desired Skills:

Has demonstrated passion for, and at least 2 years experience producing, high quality restaurant meals
Is an exceptional organizational skills, with demonstrated ability to multi-task and take initiative 
Has excellent inter-personal skills
Maintains a calm demeanor in high-pressure situations
Experience cooking and managing in a kitchen team
Has no issue with following directions
Seeks to further their skillset and food knowledge 
 

Both roles on offer are full time, and will be pivotal to steering an established team as the business expands. The responsibilities of in the kitchen will include but not limited to:

Designing weekly specials that creatively draw on North American and Latin American cuisines to produce unique and novel dishes
Overseeing delivery of stock of food and equipment supplies and doing purchase orders
Ensuring freshness and quality of the ingredients and preparation of meals
Demonstrate new cooking techniques and equipment to staff, including use of offset smoker
Prepare and cook foods for dining service, including the use of the offset smoker
Implementing and enforcing hygiene regulations and examining equipment for cleanliness
Food stocktaking procedures and waste management
Day to day temperature check 
Provide and record a program of basic training for all new members of staff and communicate performance and development issues on a regular basis
Manage the team of kitchen staff during service
