The role is to oversee the daily running of the Food and Beverage venues ensuring that they are operating at the highest standard possible. You are to ensure that the standard of service is at its optimum and consistent in product, service, and recruitment. It is your responsibility to ensure that all guests and staff are provided with a safe environment.
Tasks Include:
• Liaise with senior management and executive chef on menu planning, recruitment, and beverage offerings.
• managing day-to-day operations of a unique venue offering to deliver exceptional experiences.
• Reviewing and analyzing the daily operational needs maintaining beverage, product, and expenses on budget
• Leading and motivating the team to continuously deliver guest experience in line with our service culture.
• Providing recommendations for guest, team, operational or compliance improvements
• Awareness and implementation of compliance and duty of care operational requirements such as responsible service of alcohol.
• Targeting corporate food and beverage bookings, medium and large functions
• Oversee day-to-day operations, ensuring the smooth functioning of all departments, such as the kitchen team, functions, food and beverage, maintenance, and other day-to-day tasks that might come up.
• Review and approve financial transactions, such as invoices, payroll, and purchasing orders.
• Personally monitor team member performance on the floor with a ‘hands on’ approach
• Provide strong leadership and guidance to the entire staff, ensuring a positive and productive work environment.
• Maintain stock requirements for the venue are maintained and efficiently stored.
• Maintain efficient staffing schedule with Wage % to Sales excluding GST at agreed KPI level.
• Execute weekly meetings with the duty managers & bar supervisors.
• Ensure that a responsible service of alcohol is always respected, and RSA records are kept up to date.
• Collate all maintenance requests, coordinating the preferred persons in the performance of the required duties in a timely manner.
• Liaise with the Functions Department on all planned events, ensuring optimum service levels and function coordination are maintained with complete client satisfaction and the presentation of a professionally operated venue.
• Monitor daily the required standard of cleanliness for the venue, liaising with the contractor on all issues relevant to the original service contract.
• Coordinate production requirements for the venue (weekly), ensuring safe set up and break down within the venue.
• Provide excellent conflict negotiation skills, always supporting staff and security.
• Ensure that the music/entertainment is always in line with the ethos of the venue.

Qualifications:
• AQF associate degree, Advanced Diploma or Diploma (ANZSCO Skill Level 2) is preferable.
• At least three years of relevant experience may substitute for the formal qualifications listed above.
• Current Responsible Service of Alcohol Certificate.
• Current Responsible Gambling Certificate.
• Current Responsible Manager of Licensed Venues Certificate.
• Current Approved Manager licence
Other requirements/special circumstances:
• Strong ability to pull and push work-related equipment.
• Ability to bend, twist, stoop, and pull.
• Strong hand-eye coordination and motor skills.
• Great Presentation and attention to detail.

The right candidate will be remunerated in accordance with their experience, between $70,000 and $72 500 plus superannuation.
