Our Client, Bicher & Son Pty Ltd, is looking to employ experienced cooks in multiple positions for its venue at Machiavelli Ristorante Italiano, Sydney 2000. Machiavelli proudly upholds the rich heritage of Italian culture, passed down through generations of sacred recipes and a profound love for Italian cuisine. Located in the heart of Sydney, this restaurant stands as a beacon, representing the essence of Italian culinary tradition in modern Australia. With a commitment to excellence, Machiavelli warmly welcomes every customer through its doors, ensuring an unforgettable dining experience.

The positions will be on a full-time basis with a salary ranging from 70-80K AUD per annum plus superannuation, which will be negotiable to the right candidate.


Scope of the role:
- Assess food items to ensure they meet quality and safety criteria.
- Control the temperatures of cooking equipment to achieve ideal cooking conditions.
- Prepare and cook a diverse range of meals following established recipes and presentation guidelines.
- Season dishes correctly during the cooking process to enhance flavour.
- Serve food in appropriate portions, ensuring an appealing presentation with sauces and garnishes.
- Store food in temperature-controlled environments to maintain freshness and prevent spoilage.
- Prepare meals that accommodate specific dietary needs and restrictions.
- Assist in designing seasonal menus that reflect customer preferences and available ingredients.
- Calculate food requirements for events and daily operations to minimize waste and ensure adequate supply.
- Monitor inventory levels of ingredients and supplies, placing orders as necessary to maintain stock.
- Train and mentor kitchen staff and apprentices on cooking techniques, food safety practices, and kitchen operations.
- Collaborate with other kitchen staff to ensure efficient workflow and timely service during busy periods.
- Experiment with new recipes and cooking techniques to continually improve the menu offerings


To be considered for this role, you should:
- Be willing to relocate if you are interstate or in other cities.
- Be available on both days at weekends and be able to work split shifts.
- Certificates III & IV in Commercial Cookery
- Have at least 2 years of work experience as a Cook
- Ability to work in a team.
- Excellent communication skills.
