At Burleigh Baker, we are dedicated to creating nutritious and delicious pastries that prioritize gut health. Our commitment to natural ingredients and traditional baking methods, including long fermentation, sets us apart. We believe in the science behind our ingredients, ensuring that every product not only tastes exceptional, but also is beneficial to a healthy lifestyle. As we use only natural ingredients (no premixes) and smaller flour mills, you will need to demonstrate an interest in the artisan approach, which involves handcrafting doughs and a desire to help create products that are designed to enhance good health.

You will enjoy a good work/lifestyle balance; shifts are usually 8 hours long, between 6 am and 6 pm, with Saturday or Sunday work determined by a rotating roster.

What We're Looking For:

- Expertise in Long Fermentation: We seek a Pastry Chef who has mastered the art of long fermentation, bringing out the best flavours and textures in every pastry.
- Commitment to Nutrition: Our ideal candidate is passionate about nutrition and understands the importance of using natural, unprocessed ingredients.
- Creativity and Innovation: We value a chef who can bring fresh ideas to our cakes while maintaining the integrity of our ingredients and traditional baking techniques.
- Attention to Detail: Precision and consistency are key. Every pastry must meet our high standards of excellence such as low sugar content, no seed oils, activated nuts and organic or sustainable flour.
- Team Player: Collaboration is at the heart of our kitchen/Pastry section. We need someone who can work well with our dedicated team of Bakers and Pastry chefs.

Responsibilities:

- Develop and execute a range of sourdough pastries, including French croissants and other viennoiserie, cakes, biscuits, brownies and innovative seasonal creations, using long fermentation techniques.
- Operating equipment such as ovens, dough sheeter, rolling machine, and bun machine.
- Ensure all ingredients are natural and of the highest quality, maintaining our commitment to nutrition.
- Collaborate with the production and R&D team to create and improve recipes, ensuring a consistent and exceptional product.
- Weighing and mixing ingredients, kneading, moulding and shaping fermented pastry dough.
- Preparing pastry fillings, creams, glazes, and compotes
- Maintain a clean and organized workspace, adhering to all health and safety regulations.
- Contribute to a positive, productive kitchen environment.

Requirements:

- Proven experience as a Pastry Chef, with a focus on long fermentation.
- Deep knowledge of natural ingredients and nutrition.
- Strong attention to detail and dedication to quality.
- Ability to work in a fast-paced environment while maintaining a positive attitude.
- Excellent communication and teamwork skills.

-You must have existing permanent work rights for Australia
-You must be available to work one day of the weekend.
