Giuseppe's Gourmet Meats is an established and reputable gourmet Italian butchery and deli located in Waverton in NSW. They are now looking for a highly skilled Butcher to join their team.
The Role
The position is for an experienced Butcher on a full-time basis with an annual salary set at $73,500 plus superannuation.
Responsibilities
Prepare meat for sale by deboning, trimming excess fat, and cutting, mincing, or grinding it to the desired shape and size for display or as requested.
Prepare crumbed cuts of meat, and marinate, season, and cure special cuts according to customer preferences
Select and prepare meat to produce smallgoods such as sausages, patties, and meatloaves
Use machines to grind, mix, mince, and tenderize meat efficiently.
Prepare seasonings and pickles by blending spices, salt, and other ingredients to enhance the flavor of the meat.
Operate sausage-filling machines to produce a variety of sausage types.
Use smoking chambers and cooking kettles and vats to smoke and cook meat products
Provide customers with guidance on the suitability and uses of various cuts of meat.
Arrange and maintain the meat display to attract customers and ensure product freshness
Monitor inventory levels and order supplies as needed to maintain stock
Ensure hygiene and safety standards are maintained in the butchery, including cleaning equipment and work areas
Assist in menu planning and scheduling for customers or catering services
Estimate food production costs and help in pricing meat products competitively
Take customer orders and prepare meat products according to specific requirements
Package and label meat products accurately for sale or delivery
Requirements
Relevant trade qualifications in meat processing or butchery
Minimum of 2 years of experience in a high-volume butchery in a retail butcher setting
Minimum of 2 years’ experience in preparing a wide range of specialty cuts and smallgoods
Minimum of 2 years’ experience in managing high-volume meat production, including the operation of advanced machinery
In-depth knowledge of meat science, including muscle structure, fat distribution, and marbling
High level of accuracy and attention to detail
Must be physically fit as job requires performing physically demanding tasks.
Proven track record of reliability- references required
Demonstrated knowledge of the best safe work practices
