Situated on the picturesque Swan River, the Tradewinds Hotel is an iconic venue in East Fremantle, a stones throw from the vibrant streets of Fremantle.
We are looking for a passionate, talented & dedicated individual to fill the position of Chef de Partie. You will assist with the efficient operation of the kitchen, working alongside the Executive Chef.
Tasks & Duties:
• Assist Sous Chef & Executive Chef to ensure all kitchen operations are running effectively and profitably.
• In consultation with the executive chef provide input for food production strategy and input for budget process.
• Monitor and control labour costs. Effectively manage labour planning, associates’ rostering and conduct daily shift briefings.
• Oversee adherence to the use of the food safety manual.
• Research and establish suitable cuisine for all hotel food outlets. Assist with the preparation of menus for all food outlets.
• Supervise and maintain quality control, including tasting and examining food for outgoing meals and incoming produce according to specification. Maintain temperature controls.
• Maintain efficient stock handling and rotation practices.
• Recruit, support and develop direct reports. Conduct regular appraisals and provide feedback to maximize performance.
• Implement local standard operating procedures in conjunction with General Manager and ensure training in and adherence to these procedures.
• Ensure Food and Beverage grooming standards are maintained and act as a role model in this regard.
• Comply with Tradewinds OSH policies and procedures relevant to the Division or area of work.
• Duties as requested by your manager.
Skills and experience:
• Relevant Tertiary Cookery Qualifications
• Previous experience within hotel environment desirable.
• Previous experience with banqueting and functions desirable.
• Food costing/budgeting and cost control experience.
• Demonstrate ability to lead, coach and inspire teams.
• Excellent communication skills (written and verbal) with an enthusiastic approach to training and developing associates.
• Display a passion for creating high standards of excellence in food preparation and presentation.
• Computer literate (Microsoft Office Suite)
