On behalf of our client (Samphire Rottnest), we are advertising.
Samphire Rottnest is looking for Sous Chef to join their team based in Rottnest.

Primary Objectives:
* Effective kitchen management, meeting food costs and meeting the requirements of the customer satisfaction program. To develop and maintain high standards of hygiene, food quality and presentation.
* Instigate procedures and guidelines for all kitchen staff to follow.
* Provide leadership and ensure maximum productivity at all times.

Responsibilities:
Training of all kitchen standard to high standards : Hygiene, quality of food preparation, stock control.
When required by the executive Chef, is responsible for developing and writing the menus but must:
Encourage the involvement of all members of the kitchen staff.
be mindful of the food costing parameters when devising a menu.
Be mindful of the sales mix and customer likes and dislikes
Balance price point customer acceptance
Regard criticism by management and other staff members as constructive and react appropriately to address those criticisms.
Ensure daily specials are done, and will encourage the participation of all kitchen members in the process.
All specials are to be properly explained to the floor staff prior to the start of service and where appropriate plated and presented to the floor staff for tasting prior to the start of service.
Specials are to regarded as menu development and also to be used to maintain stock in the optimum condition.
Ensure that plate presentation is set and maintained
Involve the opinion of all members of the kitchen and management staff as to the suitability of the presentation.
Accurate description for all dishes on the menu.
Ensuring the stock is properly rotated.
When required by the executive Chef, is responsible for coordinating and finalizing an accurate monthly stock take on the last day of each month as well as weekly stock take of meat, fish, dairy and vegetables.

EXPERIENCE:
Must have at least 3 years experience.
Location: Rottnest Island, WA
Salary :$75.000 per annum
