The Limerick Arms Hotel is seeking experienced Chef de Partie and Sous Chef to work closely with the senior management and help lead our kitchen team.
We are looking for driven and committed candidates with excellent food service knowledge. The suitable candidates must be able to work full time, including days/nights and weekends.
Position Criteria
This role requires ability to organize and control day to day operations of the kitchen as well as planning and communicating details on special events and functions.
Key to the success to this role will be the skill to perform following duties:
Managing and supervising kitchen staff members to ensure high standards of service
Training kitchen staff on preparation and presentation of the dishes
Supervising junior members of the kitchen and ensuring that junior chefs and trainees receive the right training and optimum guidance
Preparing for the service and assigning food preparations and other duties required for the shift
Performing duties related to kitchen opening and closing standard procedures
Communicating food preparations and other duties for the next shift by the end the shift
Liaising with front-of-house staff to ensure proper sequence of service and to obtain guests’ feedback
Developing menu and improving standard recipes to optimize the costs and wastage
Maintaining the menu in line with customers’ expectations and accommodating guests with allergies
Assessing inventory and requesting supplies when necessary
Receiving deliveries and verifying that all ordered items are received and are good quality
Ensuring compliance with national food safety regulations and guidelines and venue standards
Using safe work practices and supporting others to use them
Hiring, training and supervising new staff members
Preparing weekly roasters
Representing the company with a high level of professional appearance
Position Requirements
The successful candidates would meet following qualifications, experience and abilities criteria:
Relevant Diploma qualification preferred
Minimum 3 years of experience in similar role in the hospitality industry
Strong planning, time management and organizational skills and work ethic
Excellent communication, leadership, customer service and people skills
Ability to work full time on a flexible roster
Position Salary
$73,500 per year plus super
