About the business and the role:

Grazing Restaurant and Function Centre is located in the historic Royal Hotel, Gundaroo. An established dining and event venue located only 30 minutes from Canberra. Our focus is solely on local and regional wines and producers. We deal directly with local wineries, winemakers and farmers, these partnerships have been forged over a long period of time and underline the importance of the community to Grazing.
For over 13 years Grazing has enjoyed a reputation of being a highly regarded and multi award winning establishment. The unique setting of Grazing in the historic village of Gundaroo in the 150 year old Royal Hotel offers experiences rarely available so close to a growing metropolitan centre. Grazing boasts a dedicated function area specifically constructed to engage large group events such as weddings, corporate occasions and private parties. We enjoy a year round trade incorporating functions while providing a vibrant A la Carte dining scene for our guests. The function area accommodates 140 while the dining area seats up to 90. Grazing is opened Thursdays to Saturdays for lunch and dinner and Sundays for lunch. Grazing also trades on selected public holidays throughout the year.
We enjoy an established and dedicated long term work force, many of whom are local Gundaroo residents. This allows us to develop a high focus on consistency of food and service, the building blocks of our reputation.
We are currently seeking passionate and enthusiastic chefs to join our kitchen team. The positions are a rare opportunity for the successful candidates with the right credentials and experience to join the catering team in one of the region’s best rural restaurants.

Job tasks and responsibilities:

The Chef role is central to the daily operation of Grazing. The successful candidate will be required to perform the following tasks:
• Liaise with the Head Chef and venue coordinator regarding menus, ingredients and guests requirements
• Oversee quality standards as set by the Head Chef or other designated supervisors
• Assist in stock ordering, control and rotation
• Assist with menu development and costing
• Identify areas where kitchen efficiency might be applied and make suggestions to supervisors
• Quality control and assessment of produce at time of storage
• Food preparation control, avoid unnecessary food wastage and/or spoilage
• Observe and maintain the highest level of meal preparation through to completion of task
• Always maintain the highest level of hygiene practices in accordance with the NSW Food Authority, and assist others to do the same
• Demonstrate a wide range of cooking techniques depending on the desired result of the dish
• Understand where the produce has originated, its farming process and how best to store it

Skills, experience and attributes:

The successful applicant will have:
• A Diploma or above in Professional Cookery or equivalent
• A minimum of 4 years relevant kitchen experience
• Experience in a fine dining establishment will be well regarded
• The ability to recognise the strengths and weaknesses of the catering team and to delegate tasks to junior staff in ways that best utilise their skills
• A calm and professional attitude to colleagues and customers alike
• The ability to work well and make appropriate decisions under pressure
• A demonstrated ability to multi task
• An appreciation of the subtleties of working within a fine dining establishment, where they are keen to learn about fresh local produce.
• Good communication skills and a high level of professionalism.
