About The Client

Tetsujin is a popular Japanese restaurant located in Melbourne CBD. They are currently looking for an experienced Chef to join their kitchen team.



The Role

This is a full-time role with an annual salary at $70,000 plus superannuation.




The Responsibilities

Prepare and cook food of regular basis or for special guests or to dietary requirements

Determine how food should be presented, and ensure consistent presentation look

Determine production schedules & staff requirements necessary to ensure delivery of services

Estimate amounts and costs of required supplies, such as food and ingredients

Inspect supplies, equipment, and work areas to ensure conformance to established standards

Maintaining a clean and sanitized work station

Following kitchen standard operating procedures

Supervising of cooks of a lower grade

Ensure cooks/kitchen staff are trained to standard operating procedures

Plan various menu items, based on factors such as cost of labour, ingredients and other overhead costs

Supervise and coordinate activities of cooks and workers engaged in food preparation

Plan and develop recipes and menus, taking into account seasonal availability of ingredients

Maintain good relationship with customers and suppliers (resolving issues with suppliers if any arises)

Strictly follow and adhere to the budget of the restaurant , by ensuring that supplies and/or orders are in line with the budget and supervising food and labor cost(s)

Make sure that kitchen safety measures are met and that sanitation practices are carried out to the letter

Create new methods and recipes in preparation of meals

Make sure that the restaurant or keeps up with new trends in the industry

Maintain work schedule for kitchen staff so as to ensure smooth flow of activities in the kitchen and the restaurant or hotel at large

Make sure that meal is prepared and served to customers in a timely manner

Monitor and maintain stock levels so as to place orders for supplies as at when due

Create menus that tend to suit the need of customers

To adhere to all company policies and procedures at all times

Presentation and grooming standards are adhered to









The Requirements:



To be considered for the position you must meet the following requirements:



At least a Certificate IV in commercial cookery

Have at least 3 years’ experience working in a commercial kitchen

Have at least 3 years’ experience preparing sushi

Have at least 3 years’ experience in Japanese cuisine menu planning

Must know how to cook pizza using specialized pizza ovens

Must know how to prepare pasta sauces from scratch

Demonstrated ability to multi-task

Experience supervising staff

Ability to manage stock and par levels within budget

Demonstrated experience working in a fast paced environment

Is punctual and able to follow instructions

Maintains a clean and sanitized work area
