Position Description: Chef de Partie
Report to: Back of House Manager
Position Objective A Chef de Partie will have completed a certificate or apprenticeship. They are expected to run a section unsupervised and assist with the training and supervision of junior staff. They must show a keenness to assist the senior staff in the overall running of the kitchen.
Kitchen Operations
? Prepare and cook menu items to recipe specifications
? Set up and maintain section in readiness for service
? Execute plating of dishes to a high standard, in accordance with company expectations of presentation, speed, consistency, and quality
? Assist in the training and supervision of junior kitchen staff members
? Maintain stock control of communal spaces (cool room, dry stores, shed) using the first in first out system.
? Assist senior chefs with quarterly stocktakes
? Adhere to and enforce strict health and hygiene standards
? Writing of prep lists and ordering requirements to ensure smooth running of section General
? Work well within the team environment as a contributing member
? Develop & maintain effective relationships with the management team & employees at all levels across the business.
? Actively participate in team meetings
? Ensure conformance to all relevant company policies & procedures and relevant Acts & Legislation
? Ensure adherence & obligation for a safe workplace in accordance with the Occupational Health & Safety Act 2004
? Other duties as requested by senior chefs
? Respond proactively to prevent negative customer service situations
? Be punctual and focussed
? Maintain an efficient, friendly team environment
Knowledge and certification
? Completed hospitality certification or apprenticeship
? High level of dietary and menu alteration knowledge
? High competency of menu terminology
? Safe food handling
? Good level of numeracy
? Experience of kitchen equipment and dangerous equipment including blades
