Oscar's Bakery Café (Authentic Artisans Pty Ltd) is a family owned and managed Turkish-Mediterranean cafe. We value our heritage and our menu is built from age-old recipes passed through the family for generations. We also pride ourselves on the influence and creativity of Chefs who join us. Everything is made from scratch (including all our pasta, pastries and breads) using the best quality, fresh ingredients. We aim to provide Canberra and the surrounding areas with a benchmark in quality products that inspire.We are looking for a versatile and experienced pastry chef to join our busy Turkish - Mediterranean style artisan bakery located in Weetangera, Canberra.

The pastry chef will lead our retail and wholesale production team and will be responsible for preparing and baking a variety of Turkish based desserts, breads, cakes, and pastries, train new pastry cooks as well as product development.

Duties and Responsibilities

Manage the day-to-day operations of our wholesale bakeries
Prepare a wide variety of Turkish based desserts, cakes, pastries including Baklava, Kadayif, Sobiyet, Revani, Sekerpare, Tulumba, Bulbul Yuvasi, Dilber Dudagi, Kazandibi, Acibadem, Pide, Gul Borek, Gozleme, Su borek, Simit, Turkish Bread, Tahinli Corek, Olive Acma, Turkish Delight
Able to create, design and develop new Turkish based products
Maintain a clean and hygienic workspace
Operate and maintain machineries/equipment to ensure the smooth operations of the kitchen and compliance with occupational health and safety regulations
Keep accurate records relating to food production to ensure food safety
Be able to plan and cost products
Monitor stock, budget and met demand schedules
Supervise and coordinate all pastries and dessert preparation and presentation
Lead and manage team
Train new pastry cooks
Exceptional Pastry Chef Skills required

Able to source and check quality products to make traditional and authentic Turkish pastries
Able to use a range of raw materials, weigh and measure ingredients to create a range of traditional pastry goods
Knead, mould, mix, shape doughs and pastries, adopting traditional Turkish techniques and methods
Prepare fillings and decorate pastries and desserts with a variety of toppings and other items, incorporating Turkish flavours
Monitor oven temperature and determine baking period based on product requirements
Other Skills

Have great attention to detail, and take pride in producing high-quality items
Be reliable
Have a high standard of professional hygiene
Exceptional technical skills decorating and making pastry goods
Be able to lead and manage a team
Experience required

At least 5 years related work experience
Preference given to applicants with experience in Turkish pastries and breads
Trade/Vocational certificates highly regarded though not mandatory
Must have food safety supervisor Certificate or ability to get one
