Grand Pacific Group has a number of premium venues in the exclusive suburbs of NSW – as well as beautiful venues in Canberra ACT. We are looking for a number of professional Cooks to join our teams based in NSW! The successful candidate will utilise their culinary skills in order to maintain and enhance our customers' satisfaction.
As a Cook, the role is responsible for assisting in the preparation, production and presentation of all food items at the Venue, ensuring that it is of a standard consistent with our brand.
DUTIES:
• To play a key role in the consistent delivery of high-end restaurant quality food
• Create and prepare all food items as required by the business!
• Ensure food is prepared and produced on time!
• Preparing and cooking food
o examining foodstuffs to ensure quality.
o regulating temperatures of ovens, grills and other cooking equipment
o seasoning food during cooking
o portioning food, placing it on plates, and adding gravies, sauces and garnishes
o storing food in temperature-controlled facilities
o preparing food to meet special dietary requirements
o plan menus and estimate food requirements.
o may train other kitchen staff and apprentices.
o Demonstrating techniques and advising on cooking procedures

• To ensure all kitchens have regulatory compliance with relevant laws and that systems and training are adhered to – including but not limited to OH&S and hygiene regulations.
• To have positive and ongoing communication with other departments to ensure a seamless operation to your responsibilities and service to our customers.
• Monitoring quality of dishes at all stages of preparation and presentation
• Discussing food preparation issues with Managers, Dietitians and kitchen and waiting staff
• To ensure wastage is minimised
• To assist in the control of stock levels

WORKING CONDITIONS:
• The position will require flexible hours of work, including weekends and public holidays.

REQUIRED SKILLS and EXPERIENCE:
• At least a Certificate III in Hospitality, Commercial Cookery or equivalent qualification
• Minimum 2 years' employment experience (post Apprenticeship/Qualification) in a similar role with experience in a variety of hospitality venues – experience in high tea (or similar) highly advantageous.
• Great organisational skills with an acute attention to detail
• Must have the rights to work in Australia full time
• Experience in operating a food & beverage venue / kitchen in strict accordance with legislation in relation to safe food handling and WHS
• Works willingly as part of the team to ensure services are of a high standard.
• Has a positive, professional attitude.
• Punctual, organised and trustworthy
