Job Description
As a Chef at Ramen Samurai, you will play a key role in delivering an exceptional Japanese dining experience by preparing authentic, high-quality ramen and a variety of other traditional dishes. You will lead the kitchen operations, maintain food standards, and innovate new offerings, ensuring the culinary excellence that Ramen Samurai is known for. This role requires strong expertise in Japanese cuisine, particularly ramen, with a focus on traditional methods and fresh ingredients.
Key Responsibilities:
• Plan and Design Menus: Develop and refine menu items, particularly focusing on ramen varieties, using seasonal and fresh ingredients, while incorporating traditional Japanese cooking techniques.
• Preparation and Cooking of Meals: Oversee the preparation and cooking of all dishes, including ramen, donburi, gyoza, and other Japanese specialties, ensuring consistency in taste, presentation, and quality.
• Supervise Kitchen Operations: Manage daily kitchen activities, including coordinating the preparation of meals, monitoring staff performance, and ensuring the smooth operation of the kitchen during busy periods.
• Maintain Food Safety and Hygiene Standards: Ensure that all kitchen processes comply with local health regulations and the restaurant’s high food safety and hygiene standards.
• Lead and Train Kitchen Staff: Provide guidance and training to kitchen assistants and junior chefs on proper cooking techniques, food presentation, and kitchen safety practices.
• Monitor Inventory and Stock Levels: Oversee the ordering and storage of ingredients, ensuring sufficient stock levels while minimizing waste.
• Innovate New Dishes: Experiment with and introduce new Japanese dishes to the menu, keeping in line with the restaurant’s focus on fresh, authentic cuisine.
• Cost Control: Monitor food costs, portion control, and inventory to ensure profitability while maintaining quality.
Requirements:
• Relevant Australian qualification in commercial cookery (e.g., Certificate IV in Commercial Cookery or equivalent).
• At least two years of experience working as a Chef in a Japanese restaurant in Australia.
• Strong knowledge of Japanese cooking techniques and ingredients, particularly in ramen preparation.
• Proven ability to manage kitchen operations, lead staff, and maintain high culinary standards.
• Ability to work efficiently in a fast-paced environment while maintaining attention to detail and quality.
• Commitment to maintaining high hygiene and safety standards.
