Key Responsibilities:
Plan and develop menus that align with the restaurant's vision and meet customer preferences.
Estimate food and labour costs to ensure efficiency and profitability.
Order food supplies and maintain inventory levels, ensuring freshness and availability.
Monitor the quality of dishes at all stages of preparation, cooking, and presentation.
Collaborate with Managers, Dietitians, and kitchen/waiting staff to address food preparation concerns.
Demonstrate culinary techniques and provide guidance on cooking procedures to kitchen staff.
Prepare and cook food, ensuring dishes are consistently prepared to the highest standards.
Enforce and explain hygiene regulations to ensure food safety and cleanliness in the kitchen.
May select, train, and supervise new kitchen staff.
May oversee the freezing and preservation of foods to manage stock and reduce waste.
Requirements:
Australian Citizens and Permanent Residents are encouraged to apply.
Minimum Diploma of Hospitality or equivalent certification.
Minimum 1 year of experience in a commercial kitchen environment.
Proficiency in menu planning and recipe development.
Ability to estimate food and labour costs and manage kitchen budgets.
Strong knowledge of food preparation and cooking techniques.
Ability to order, manage, and maintain food supplies.
Experience in monitoring food quality during preparation, cooking, and presentation.
Strong understanding of hygiene regulations and food safety standards.
Ability to train, supervise, and guide kitchen staff.
Capable of working in a fast-paced environment and handling multiple tasks simultaneously.
