Our business, Ajisen Ramen, is looking for a qualified and highly experienced full-time Executive Chef to manage and direct the kitchen operation of multiple Japanese restaurants across Victoria, Australia. As our full-time Executive Chef, your main responsibilities and duties as our Executive Chef include and not limited to the following:
• overseeing the overall kitchen operations of multiple Ajisen Ramen restaurants in Victoria to ensure all kitchens are operating effectively and efficiently;
• developing and managing the brand of the Ajisen Ramen chain of restaurants by analysing pricing, sales and consumer demands;
• providing advice on strategic planning, setting up or refurbishing kitchens;
• meeting with the management and subordinated chefs to discuss issues related to kitchen operations;
• producing and reviewing menu;
• developing special or new recipes;
• determining serving size and use of ingredients;
• food and labour cost control;
• stock and kitchen inventory control;
• sourcing and ordering high quality of food supplies;
• monitoring quality of dishes at all stages of preparation;
• checking the quality of dishes prepared to ensure proper serving size and presentation before serving;
• providing training to kitchen staff by demonstrating unique cooking techniques and advising on cooking procedures;
• supervising the work of chefs, cooks and other kitchen staff;
• instructing chefs, cooks and other kitchen staff in preparation, cooking, garnishing and presentation of dishes;
• preparing and cooking head chef special dishes;
• enforcing the compliance with food safety handling policies and procedures.

Skills and experience:

• Hold at least a Certificate IV in commercial cookery or equivalent
• Must have at least 10 years of experience as a qualified Chef
• Must have high level of culinary skills and knowledge in Japanese cuisine
• Ability to manage multiple busy commercial kitchens
• Must have full work right and able to work full-time
• Prefer have Australian driver license

Salary:

$100,000 to $150,000 a year plus superannuation, commensurate with experience.
