Palooka is a European inspired restaurant owned and operated by Cairns' renowned restauranteur, Sam Byrd. Sam has a long history of building and creating some of the city's most iconic venues and Palooka is no exception. The menu is varied with a focus on steak, pasta and wood- fired pizza.
We are looking for a Head Chef to LEAD our kitchen team.
To be considered for this exciting opportunity you must have the following:
Skills & requirements:
-Excellent technical knowledge and experience in all cooking techniques and styles
-Experience creating weekly specials
-A supportive and strong leader with great presentation and communication skills
-Exceptional time management and organisational skills, with the ability to work well under pressure
-Ability to cater for dietaries without compromising on guest enjoyment
-A positive and infectious attitude
-Must be trade qualified 3+ years and have experience as a Head Chef in a stand alone venue
Responsibilities:
-Ensure consistency and highest quality in taste and presentation of menu dishes
-Preparation and planning of hot and cold food, including breakfast, lunch and dinner service
-Ensuring all Food and safety standards are upheld
-Ordering and stock control
-Lead in minimisation of food waste
-Create weekly roster
-Hiring and orientation of kitchen staff
annual salary: $80,000- $90,000 pa
