Benefits N/A Task & Responsibilities Planning menus, keeping in mind budget and the availability of seasonal ingredients. • Estimating foods costs, monitoring, and recording foods waste • Monitoring stock levels and placing orders to replenish stock as necessary • Preparing relevant ingredients and menu items and create typical Brazilian dishes • Monitoring the quality of dishes throughout all stages of preparation, cooking, and presentation • Cooking and serving dishes with a high attention to detail • Advising on cooking procedures • Explaining and enforcing Health and Safety Regulations and ensuring a high level of cleanliness is maintained within the kitchen and workplace • Correctly handling and storing food • Communicating information regarding food preparation with Management, kitchen and waiting staff • Recruiting/training other kitchen staff on existing and new upcoming procedures • Coordinating kitchen staff and assisting as required • Receiving feedback and making improvements where necessary • Creating new recipes to keep the menu fresh and exciting Qualification & Experience Relevant Diploma qualification and 2 years of work experience About Company La Cafeteria which trades under the name “Casa Brasil” is a family friendly restaurant and bar serving Brazilian cuisine on the Gold Coast. The restaurant was first established in 2018 in Nerang where operations were quite simple and cafe-style, serving breakfast and lunch only. As the customer base expanded and popularity grew, a new location was acquired in Chevron Island which allowed for a larger floor plan, increased seating capacity and integration of a Bar. Casa Brasil is open from Wednesday to Sunday and open for Lunch and Dinner service. The customer base is primarily made up of locals with tourist traffic increasing over holiday periods. Casa Brasil can seat appropriately 100 patrons and frequently hosts live music shows which are very popular among the community.
