Rydges Fortitude Valley Brisbane is a 4.5 star, 208 room hotel offering a choice of restaurants, bars and meeting and event facilities.
Reporting to the Executive Chef, the Chef de Partie is responsible for day to day kitchen operations throughout hotel restaurant bars and conferencing including direct supervision of junior chefs.
This role will primarily be operationally focused whilst providing essential support to the Executive Chef, Sous Chef and wider kitchen brigade. The successful candidate will have a positive attitude, excellent communication skills, and be a team player who works well with others.
Permanent, Full-time position
Work hours: 38 hours per week
Salary $73,150 per year plus superannuation
Key responsibilities:
• Prepare, season and cook food as directed, meeting dietary requirements where required
• Follow recipes and presentation specifications
• Operate standard kitchen equipment safely and efficiently
• Oversee and manage kitchen operations
• Clean and organise kitchen and equipment in adherence to hygiene and safety regulations
• Preserve and store foodstuffs in appropriate temperature-controlled facilities
• Recording food temperature
• Train apprentices and other kitchen staff
• Assist with menu planning and development
• Stock management including ordering, rotation and wastage control
Required experience and skills:
• Minimum of 2 years’ work experience in kitchen leadership roles
• Minimum of 3 years’ work experience in Grill Section
• Ability to work in a fast-paced environment with multifaceted kitchen operations
• Attention to detail
• Maintain a positive and professional approach with co-workers and customers
• A versatile and hard-working person with a practical hands-on approach, who strives to achieve the best outcomes at all times.
• Excellent communication and organisational skills
• Good knowledge of policies and procedures in workplace
Qualifications Required
• Certificate IV in Commercial Cookery and/or Kitchen Management
• Diploma of Hospitality Management
