The Role
This is for a full-time role with an annual salary between $65000 and $80,000, depending on experience plus superannuation.
Key Duties and Responsibilities:
Prepare and cook authentic Italian dishes, with a focus on wood-fired pizzas, mozzarella-based recipes, and pasta, following traditional methods.
Assist in designing and updating the menu, keeping the seasonal availability of ingredients and Italian culinary trends in mind.
Collaborate with the head chef to introduce new recipes and daily specials based on authentic Italian cuisine.
Source, inspect, and select high-quality ingredients, particularly Italian produce such as mozzarella, tomatoes, and olive oil, ensuring freshness and authenticity.
Prepare house-made dough, mozzarella, and sauces from scratch, adhering to traditional Italian techniques.
Operate and maintain cooking techniques, ensuring the correct temperature and cooking times for each dish.
Maintain cleanliness and hygiene in the kitchen, ensuring compliance with food safety standards and regulations.
Supervise and train kitchen staff in cooking techniques, preparation and cooking methods.
Ensure that all dishes meet the high-quality standards, including portion control, taste, and presentation.
Monitor and adjust cooking techniques and timing to maintain consistency across all dishes.
Monitor stock levels of key ingredients such as fresh mozzarella, pizza dough, and Italian herbs, ensuring minimal waste.
Implement cost control measures without compromising the quality of ingredients or dishes.
Requirements
At least a Certificate 4 qualifications in commercial cookery
Minimum 1 year of experience as a Chef in a professional kitchen
At least 1 years’ experience in preparing and cooking pizzas over a wood-fired oven
At least 1 years’ experience in preparing pizza dough from scratch
At least 1 years’ experience in preparing pizza sauces from scratch
Must be able to work with proteins like pork, beef and seafood
Must know how to prepare meals to dietary requirements
Experience in kitchen operations and in managing a team
