Pure South Dining About the role : The role's primary purpose is to ensure that dishes are prepared and presented according to the Executive Chef's standards, maintaining quality and consistency. The chef de partie is responsible for coordinating activities in their assigned section, training and supervising junior kitchen staff, managing inventory, and contributing to menu planning. This position is crucial in maintaining kitchen efficiency, quality control, and overall kitchen organisation. Key Responsibilities: · Ensure all food is prepared and cooked fresh and highest quality · Strictly adhere to recipes, methods, and instructions provided by the Executive Chef · Ensure punctual arrival for work, dressed in a clean uniform · Maintain an organised and efficient production flow, adapting to changes in forecasts and menus · Conduct regular temperature checks on food items, following proper procedures for chilling, reheating, and food-holding · Ensure proper rotation and storage of produce · Keep and report a waste log to supervisors weekly · Regularly assess kitchens upon arrival and departure, addressing or raising any safety or equipment issues promptly · Cross-check cleanliness, proper disposal of food, correct storage and labelling of stored food before finishing your shift. · Ensure local Food standards & HCCAP procedures are always adhered to, following up with junior team members and the executive chef as needed · Ensure accuracy in ordering, requisitions and receiving of goods from our producers and suppliers · Delegate tasks and manage junior team members as needed to ensure effective workflow during bust services. · Regularly contribute to daily and weekly reports on kitchen activities About You: · Relevant hospitality Diploma or a Degree or Certificate IV in Commercial Cookery · Minimum two years of work experience in a high-end fast-paced kitchen · Devotion to crafting, preparing, and presenting dishes at the utmost level of quality · Capacity to follow instructions and operate effectively with minimal supervision · Team-oriented mindset and readiness to collaborate within a diverse team · Dedication and enthusiasm for delivering top-tier service, consistently prioritising requests from our patrons · Clear understanding of food safety and stock control procedures · Proficiency in sustaining a clean, hygienic, and secure work environment for all team members. · Aspiration to advance and excel within the industry and take advantage of the knowledge of our chefs, taking your career to the next level Remuneration: $72,000 - $77,000, per year, plus super Job Type: Full-Time Application Deadline: 13 October 2024 About Company Pure South Dining has forged a reputation for offering a beautiful dining experience based on stunning produce from King Island, Flinders Island and Tasmania since 2004.
