Dumbo Melb Chef - Dumbo Melbourne Salary: $70,000 p.a. plus superannuation Positions: 2 Dumbo Melbourne is located in the heart of West Footscray and is owned by the same team as Sani Café in Brunswick East. Dumbo pays homage to its surroundings with an interior inspired by locality and a menu packed full of dishes that celebrate multiculturalism. We are seeking experienced Chefs to work on a rotating basis within a fast-paced environment. Our team is an established one; we value our staff just as much as our loyal customers and offer a great work environment. Summary of Position: Organize and control the operations of the kitchen to ensure a memorable dining experience for our patrons. Duties in brief include: Planning menus, estimating food and labor costs, and ordering food supplies. Being responsible for quality control and tasting the dishes; making sure they meet the right standards and are presented correctly before they go out to the customer. Discussing food preparation issues with Managers, Dietitians, and kitchen and waiting staff. Demonstrating techniques and advising on cooking procedures. Preparing and cooking food. Explaining and enforcing hygiene regulations. Potentially selecting and training staff. Freezing and preserving foods. Creating a vision for the cuisine, inspiring the team, and delegating tasks effectively. Recruiting, motivating, and managing staff. Overseeing the day-to-day running of the kitchen, ordering food, and undertaking the kitchen inventory (this potentially includes budgeting). Overseeing hygiene and cleanliness in the kitchen. Preparing and plating dishes and contributing to menu design. To be successful in the role, you will need to have: Appropriate qualifications such as AQF Associate Degree, Advanced Diploma, or Diploma [ANZSCO Skill Level 2] at a minimum. A minimum of at least 2 years of formal experience may substitute for the formal qualifications listed above. Prior experience working in a fast-paced environment. A positive attitude with a strong work ethic and good communication skills. The ability to work well within a team environment and under pressure. Availability to work days, nights, and weekends, and have your own reliable transport. An ability and desire to work morning, late evening, and weekend shifts.
