SALARY: $70,000 - 75,000 per annum
ABOUT US:
Calypso Café operates four cafés across government buildings in Canberra, committed to providing the highest quality food and service. We are seeking a skilled and passionate Chef to join our team at the Caroline Chisholm Centre in Greenway, ACT. The successful candidate will be responsible for overseeing kitchen operations, menu development, and maintaining high standards of food quality, hygiene, and customer satisfaction.
KEY RESPONSIBILITIES:
Menu Development and Preparation:
• Re-create and redesign authentic traditional menu items.
• Prepare specials, seasonal menus, function menus, and regular menus.
• Develop new recipes and train chefs as required.
Kitchen Setup and Efficiency:
• Set up the kitchen to serve food effectively to a high volume of customers.
• Organize suppliers and create a sustainable supply chain for the restaurant.
• Ensure efficient rostering of kitchen staff according to business needs and bookings.
Supply Chain and Inventory Management:
• Order food supplies as needed from different suppliers.
• Maintain accurate food and labor cost estimations.
Food Preparation and Cooking:
• Prepare and cook food on a daily basis, ensuring consistency and quality.
• Cater to dietary requirements and special requests from clients.
• Plan and prepare for functions and events as per the business’s requirements.
Hygiene and Compliance:
• Maintain hygiene and cleanliness in the kitchen, fridge, freezer, and storerooms.
• Ensure compliance with all food safety standards and regulations.
REQUIREMENTS:
• Australian Citizens and Permanent Residents are encouraged to apply
• Minimum Certificate IV or Diploma in Commercial Cookery or relevant field.
• At least 2 years of experience in a similar role, preferably in a high-volume café or restaurant setting.
• Strong knowledge of food preparation techniques and menu planning.
• Excellent organizational and time management skills.
• Ability to work in a fast-paced environment while maintaining attention to detail.
• Leadership skills with the ability to train and manage kitchen staff.
• Knowledge of food safety regulations and hygiene practices.
• Flexibility to adapt to seasonal and client-specific menu changes.
