The Don Hodge Group needs a fulltime Sous Chef to join our growing team!

About Us:
We have a number of superior family-friendly venues offering premium dining in a relaxed atmosphere in restaurants and bistros attached to our hotels Warners at the Bay, East Hills Hotel, Belmont Hotel, Lake Macquarie Tavern, Junction Hotel Broken Hill and the Forbes Inn Hotel.
We cater to our in-house guests, local patrons, tourists to country New South Wales, offering superb dining options in the bistro and large scale events in our function suites.
Full commercial kitchen and a great working environment with top support staff. This is a full-time permanent position rostered to cover lunch and dinner service. We are open 364 days a year - weekends and public holiday work will be required.
The Role:
Working directly alongside the Head Chef, you will plan, prepare and cook a variety of dishes to meet the needs of our customers.
Accommodate customers specific dietary requirements and requests eg allergen-awareness, vegetarian, gluten-free options.
Comply with all the relevant food safety regulations and workplace health and adhere strictly to safety practices in a commercial kitchen
Source and order ingredients from local and other suppliers, developing menus to reflect the range of quality produce in New South Wales
Monitor the commercial kitchen food requirements, portion control and wastage control.
Participate in stocktaking, rostering, budgeting
Assist and deputise for the Head Chef training of junior staff and apprentices.
About You:
Trade qualified chef - minimum cert IV in commercial cookery or equivalent
5+ years industry experience in a commercial kitchen
New South Wales food handling/food safety certification
Able to work efficiently as a team member, leading and managing junior and apprentice staff
