Job description:
• Collaborate with other chefs and management to plan, create, and amend menu items in accordance with the seasonal availability and cost of ingredients.
• Stay up to date on culinary trends, incorporating new trends into menu planning.
• Estimate and calculate food, cooking equipment, utensils, and labour costs.
• Assemble and prepare ingredients for cooking.
• Cook and prepare meals to a consistent high-quality standard.
• Plate meals to a consistent standard ensuring uniform serving size, appearance, and taste.
• Manage inventory, ordering ingredients and supplies as required and in accordance with set budgets.
• Ensure the correct storage and preservation of ingredients to reduce wastage and lower costs.
• Collaborate effectively with the kitchen team to ensure meals are prepared in a timely manner to match the demand from the front of house.
• Train and provide guidance to junior kitchen staff, demonstrating various cooking techniques and procedures when required.
• Ensure kitchen remains tidy and compliant with Occupational Health & Safety standards, food hygiene standards and food safety standards.
• Attend regular training sessions to achieve the competencies required by the employer.
Qualifications/Attributes:
• Must hold Certificate IV in Commercial Cookery, or at least 3 years of relevant work experience in lieu of the qualification.
• Must possess at least a minimum of 2 years of relevant work experience.
• Have outstanding communication and leadership skills.
• Must have the willingness to collaborate with other colleagues.
• Must be obsessed with cooking, including unique and emerging trends.
• Must have organisational skills.
• Ability to adapt and work in a fast-paced environment.
Salary Range: $70,000 - $80,000 p.a. excluding superannuation.
