Duties & Responsibilities:
• Monitor and ensure the preparation, cooking and presentation of all dishes to an exceptional standard across all menus.
• Ensure the authenticity of the cuisine is maintained as per specialities offered
• Assist in selecting and training staff to ensure smooth operations of the kitchen
• Influence and monitor food costs via portion control, waste minimisation and stock control
• Ensure food and labour costs are estimated appropriately and stocks are ordered promptly
• Assist in menu review and provide suggestions in designing menus
• Ensure special dietary requirements including allergy-related requests are adhered to
• Actively maintain awareness of nutrition and healthy eating
• Ensuring that all kitchen operations comply with food hygiene (HACCP) and safety regulations
• Ensure safe production measures and food safety guidelines are explained to kitchen staff and are adhered to
• Deputising for the Head/Senior Chef when absent
• Communicate relevant issues and concerns to relevant kitchen and floor staff, Managers and Directors promptly
• Working alongside the team in offering 'hands-on support and being operationally efficient in all aspects of the kitchen ensuring maximum productivity and profitability
Senior Chef Duties in addition to the above:
• Provide leadership and support to the team whilst demonstrating hands-on skills and managing the kitchen operations.
• Develop and suggest a menu as per the cuisine requirements including creating and recommending Chef specials.
• Train kitchen staff to ensure food quality and cuisine authenticity in taste and experience for customers.
Qualification & Experience
· We are looking for qualified Chefs with relevant industry qualifications such as Certificate IV in Commercial Cookery/Kitchen Management and Diploma of Hospitality or relevant equivalent vocational qualifications.
· At least 2 years of full-time work experience as a Chef or equivalent experience in a similar role.
· At least 3 years of experience as a Chef for the Senior Chef position. Experience in Southern Indian dishes will be highly desirable for the Senior Chef position due to the cuisine requirements.
· Food Safety Certificate qualification is highly desirable.
