We are currently seeking someone who has similar commercial experience in a similar senior role. This role requires the person to have at least 2 or more years in sushi making , experience in Japanese hot section cooking techniques (i.e tempura, yakitori, hot plate), and the ability to lead a small team, train junior staff, liaise with 3rd parties for stock supply and maintaining equipment, maintain kitchen health and safety, assist with menu creation, assist with ingredients costs management, create and maintain staff rota for kitchen staff, interview staff, experience with handling raw ingredients used in Japanese cuisine.
Ideally the senior chef would work 5 days a week, full time at our Northbridge location. They would produce hand made fresh to order complex sushi dishes and Japanese traditional and fusion dishes on a daily basis.
