DUTIES
• Perform and supervise all aspects of bread production.
• Prepare and bake bread, pastry goods, and other bakery items, including weighing, mixing, moulding, proving, loading and unloading the oven.
• Maintain knowledge of new products, equipment and baking procedures.
• Assist the Production Manager to develop and maintain Production Sheets and the Dough Schedule.
• Monitor and control the use of ingredients and toppings to prevent wastage.
• Monitor and control the speed of production to ensure product is available on time.
• Monitor and assess product quality and oven temperature.
• Complete stock orders and monitor stock expirations.
• Complete stocktakes monthly
• Create a healthy and safe work environment in the bakery by managing potential hazards and proactively rectifying potential hazards.
• Follow OH&S standards.
• Follow all equipment Safe Operating Procedures
• Follow Work Health & Safety Standards and policies.
• Maintain a clean work environment and follow hygiene and dress code policies.
• Follow the Food Safety Program and cleaning schedule, ensuring maintenance of cleaning records.
• Supervise Apprentice and Baker’s Assistants
• Undertaking other additional duties, tasks and project work as reasonably directed.
REQUIRED SKILLS
Experienced Baker (at least 2 years)
Additional Comments for the Role
Weekend work required.
On the job training may be required.
Good communication skills.
Good literacy and numeracy skills.
Knowledge of Food Handling and Food Safety.
May be required to participate and compete in baking competitions.
Participate in baking workshops and forums when required.
