ABOUT THE ROLE:

This is your chance to join the team at the Portsea Hotel as part of Morris Hospitality, located on the Port Phillip Bay coastline of the Mornington Peninsula. Established in 1876, the Portsea Hotel is the perfect place to stay, dine or drink and is the ideal, picturesque venue for social gatherings, dinners, weddings, celebrations and other events/functions. The food offerings at the Portsea Hotel take inspiration form Italian shores and make the best use of fresh, local and seasonal produce with a focus on seafood dishes.

We have an exciting opportunity for an experienced restaurant professional Junior Sous Chef - a person who is capable of driving excellent product, service and team culture. At the Portsea Hotel, and across all Morris Hospitality venues, we are dedicated to ensuring the highest level of service and the smooth operation of all daily kitchen activities.

As Junior Sous Chef, you will be responsible for:

• Supporting kitchen & front of house staff in delivering great food on a consistent basis
• Assisting with kitchen/section management
• Maintaining service standards & contributing to team culture & guest experience
• Working with senior chefs to plan menus/specials
• Financial & cost management within scope of responsibilities
• Ordering & stock control
• Quality control of food production
• Preparing & cooking food
• Explaining & enforcing hygiene regulations
• Helping to oversee all kitchen operations & activities

Full-Time Salary: $70,000 - $80,000

ABOUT YOU:

To be considered for this position, you will need to demonstrate the following:

• Trade qualifications
• At least 3 years' experience at minimum CDP/Sous level
• Experience in a similar-style venue
• Experience with seafood
• Experience in sourcing fresh local produce
• Cooperation skills & the ability to work well within a team
• Be reliable & driven
• Be organised & methodical
• Excellent written & verbal communication skills
• Strong leadership & management skills
• Ability to effectively train junior workers
• Deisre to cook delicious food
• Passion for cooking & innovation
