POSITION: BUTCHER/SMALLGOODS MAKER
Location: Stratton, WA 6056
Tenure: Full-time, Permanent
Comprehensive salary package from $70,000 (plus superannuation)
Required Skills and Experience:
• AQF Certificate III in Meat Processing (Butchery) or higher
• At least 3 years recent and relevant work experience
About the role:
On behalf of our client, Global Skilled Employment Services is looking for a skilled and experienced Butcher/Smallgoods Maker who has strong communication, self-motivated and is able to work both independently and as a member of a team.
You will be responsible for the daily operations of the butchery & smallgoods production, overseeing all facets of the operation from inventory ordering, stock management, training staff and managing costs. In this hands-on role, you may lead a diverse team of qualified butchers and process workers maintaining a tight control on all aspects of product quality and operation.
Major duties and responsibilities:
• Preparation and production of quality fresh meat products to company specified guidelines and time frames
• Preparing meat for sale by removing bones, trimming fat and cutting, mincing and grinding meat to shape and size for display or as ordered
• Preparing crumbed cuts of meat, and marinating, seasoning and curing special cuts
• Selecting and preparing meat to produce smallgoods
• Operating machines to grind, mix, mince and tenderise meat
• Making seasonings and pickles by mixing spices, salt and other ingredients
• Operating sausage filling machines, smoking chambers, and cooking kettles and vats
• Maintaining a high standard of housekeeping within the Meat Department
• Abide by company policies and procedures in relation to Occupational Health and Safety (OH&S) and Food Safety to ensure a safe working environment for customers, staff and contractors
Other essential skills:
• Knowledge of using processing equipment to manufacture butchery products (grinders, bowl cutters, slicers, fillers, smoking ovens)
• Knowledge of cutting and portioning meats (schnitzels, steaks, knuckles)
• Knowledge of pumping brine (for bellies, knuckles, hams & cured products etc)
• Good verbal and written communication skills
• To maintain a high level of hygiene
• Good hand-eye coordination
