About the role
The Royston Hotel is a busy gastropub in Richmond, Victoria. The Royston consists of a
quintessentially Melbourne Front Bar, a cosy Dining Room & Beer Garden. The executive
chef at the Royston is an experienced chef, with global experience, that is now producing
elevated gastropub food in his hometown of Melbourne.
You’ll be working closely with the executive chef & the kitchen team to perform the
following tasks:
- Receiving deliveries & organising food storage areas
- Preparation of food
- Cooking in all sections of the kitchen – grill, fryers, larder, pass
- Monitoring quality of dishes at all stages of the cooking process – from
preparation to presentation
- Daily execution of cleaning schedule to ensure compliancy with council
regulations
- Working with senior chefs to develop food specials and seasonal menu changes
- Ordering
- Train & supervise junior staff
- Estimating food & labour costs
About you
You’ll be an experienced chef with at least 2 years’ experience working in a similar role,
ideally in a high end Bistro/Pub food environment
The ideal candidate will possess:
- Minimum Certificate IV commercial cookery or higher
- Food handling certificate
Attractive salary of between $65,000 - $75,000 depending on experience.
