Ormeggio's wine list has been winning awards since opening in 2009. With a heavy focus on Italian wines, a good splash of French and of course a wonderful cellar of Australian wines this is an established and varied list to engage with.
Ormeggio is dedicated to its wine cellar and is looking for a Head Sommelier who is just as passionate about growing its list, matching great wine with great food and engaging with our guests.
This is a wonderful opportunity to join the Pavoni Hospitality Family.
Requirements:
- Australian working rights
- Fluent English
- Wine Knowledge
- Current NSW RSA Certificate
- Minimum of one year working in fine-dining or similar hatted restaurants
- Formal wine studies completed
- Hours do include weekend & public holiday work.
Tasks include:
- Managing and developing a wonderful varied and worldly cellar with the support of your team and encouragement of the other senior management members
- Continuous training and development to ensure current knowledge
- Advising customers on wine pairing with food, occasion and budget
- Liaise closely with other restaurant staff, so that you are on hand to take drink orders and serve guests at the appropriate time
- Responsible for briefing other restaurant staff on the wine list, so that they promote particular wines and can advise customers

- Salary $70,000 - $75,000 + Super
