To be considered for this exciting position, the candidate must fulfill the following:
- Cookery and culinary qualifications
- At least 2 years working experience as a Chef in a fast-paced commercial kitchen
- Strong experience in Chinese and Asian cuisine cooking
- Wok fried skills are essential
- Ability to maintain high and consistent standards
- Ability to work flexible rosters including days, nights, weekends and public holidays
- Ability to manage, handle and work in a busy environment
- Enforce OH&S and hygiene regulations.
- Creativity around menu development and food presentation
- Ability to lead, train and assist junior team members in the kitchen area
- Analyse recipes to assign prices to menu items, based on food, labour, and overhead costs.
- Bi-lingual/Multilingual is preferred
Job Descriptions: Duties include but are not limited to
- Preparing and cooking food to a high standard.
- Preparing and cooking Chinese, Asian, and Cantonese cuisines.
- Eager to Learn new cooking techniques, create and develop new dishes.
- Design, plan and create a menu, estimating food and labour costs, and ordering food and ingredients supplies.
- Receive and store goods and food supplies, and raw material efficiently and safely according to HACCP principles and OH&S and hygiene regulations.
- Monitor menu quality starting from preparation to presentation.
- Discuss food preparation issues with Managers, Dietitians and kitchen.
- Prepare the kitchen for operation at the start of every shift and ensure all duties are undertaken in a satisfactory & hygienic manner.
- Manage staff roster and training, equipment, and waste.
- Manipulate and deliver dishes to specific orders.
- Must be able to work a flexible roster.
