What you'll be doing…

The Hotel Chadstone Melbourne MGallery is looking for an experienced Director of Food & Beverage with an extensive 5 star luxury background to join our team. This role will oversee all the food & beverage operations within our hotel including our restaurant, rooftop bar & lounge and conference & banqueting.

Central to the success of this role will be establishing a culture of operational excellence and team development across all outlets. As a natural leader with a passion for service, you will inspire our team to deliver a luxury experience for our guests. With a keen eye for detail and uncompromising standards, your extensive background in operations will be critical to elevating the food & beverage offering throughout our hotel.

Your key responsibilities include:

  • Lead a team of culinary professionals and service experts, instilling a culture of excellence, attention to detail, and impeccable service.
  • Both guest and team experience will be at the heart of all you do. You will lead from the front and your presence in the business will be felt by the team and guests alike.
  • Implement and optimise operational processes to ensure seamless coordination between operational departments, creating an atmosphere of unrivalled efficiency. Attend regular operational meetings to ensure effective cooperation between departments.
  • Drive success through strategic management of commercial initiatives with the leadership team. Your creativity will inspire the team to deliver beyond set expectations.
  • Achieve excellent ratings for all food concepts and service delivery standards in hotel and industry reviews, including social media sites.
  • Have a detailed understanding of the P&L and take ownership over the costs of the business, always striving to find efficient solutions whilst keeping the quality high and the experience unsurpassed.
  • Work closely with the Executive Chef on menu development and to ensure exceptional food quality and consistency.
  • Control labour and operating expenses through effective planning, budgeting, purchasing decisions, policy making, and inventory control while focusing on creative revenue generation solutions to maximise profit.
