Function of employment
Co-ordinating and hands on cooking and support tasks of daily operations in the kitchen environment. Ensure the kitchen complies with sanitation regulations and safety standards. Maintain and increase the quality of food offered to local and inhouse guests.

Fostering a climate of cooperation and respect within the team while maintaining consistent quality of food and hygiene. Creating a food environment to build a quality food experience for locals and tourist park customers. Liaising with front of house staff to ensure smooth and efficient delivery of daily services.

Full time employment 40hours per week, accommodation included. Working hours will be over a 5 day period and will include weekends and evenings. Salary range $70,000 to $75,000 dependant upon skills. Must have Certificate III commercial cookery and a minimum of 3 years experience.

Competencies and duties

Maintain daily operation of kitchen and ensure daily work tasks are completed accordingly.

Maintain and improve the standards of food quality.

Preparing menu items to specific recipes and maintain a high standard of quality in product served.

Operate a smooth and efficient service shift and complete all cooking within menu time frames.

Preparation of all misenplace for service.

Conduct the yearly stock takes for budget requirements.

Maintain stock control through ordering and receipt of goods and correct food storage procedures.

Reduce wastage.

Understand and comply with kitchen food safety regulations and maintain cleanliness in the kitchen and surrounds.

Be involved with team meetings with regards to guest meal requirements and forward promotion.

Liaise with Restaurant Manager on menus and food requirements for group allocations.

Liaise with all other departments to avoid any unnecessary situations regarding and make sure the flow of communication is a smooth as possible between all departments.

Complete weekly roster with Restaurant Manager, keeping within budget allowances and maximizing staff useage between departments.

To ensure security in all areas to avoid damage and theft.

To follow Longreach Tourist Park emergency protocols and take all necessary steps in the event of fire or flood or other such emergency that may require evacuation or attention.
