Responsibilities
• Plan and direct food preparation and culinary activities
• Modify menus or create new ones that meet quality standards in keeping the integrity and simplicity of Italian Cuisine and its flavours
• Forecast food requirements effectively and efficiently and food cost accordingly
• Supervise kitchen staff's activities
• Arrange for equipment purchases and repairs
• Recruit and manage kitchen staff
• Rectify arising problems or complaints
• Perform administrative duties
• Comply with nutrition and sanitation regulations and Food Safety Standards in accordance with the Brisbane City Council Guidelines and Regulations
• Keep time and payroll records
• Maintain a positive and professional approach with co-workers and customers
• Monitoring staff levels and wage cost through effective rostering.
Requirements
• MUST BE a Resident of Australia or Eligible to work in Australia for more than 2 years .
• Minimum qualification required is a diploma or at least 3 years experience as a chef
• Excellent record of kitchen management
• Ability to spot and resolve problems efficiently
• Capable of delegating multiple tasks
• Communication and leadership skills
• Keep up with cooking trends and best practices
• Excellent high level command of the English language a must
