Position Title: Sous Chef
Salary: $70,000 + 11% superannuation
Permanent, Full-Time Position
The Lucky Prawn Chinese Restaurant (Hawke’s Lucky Prawn Pty Ltd)
The Lucky Prawn is looking for a Sous Chef for an immediate start. This position is a full-time ongoing position, working 38 hours per week based in Marrickville, NSW.
About the Role
Day to day tasks will vary, however you will be primarily responsible for the following tasks which include but is not limited to:
• Preparing and cooking food to a high standard using a variety of culinary techniques;
• Supervising and coordinate other junior kitchen staff when preparing, cooking, garnishing and plating food for service;
• Maintaining health and safety standards at all times by ensuring that the restaurant adheres to various legal frameworks including taking responsibility for food safety kitchen security;
• Liaising with customers when required to ensure that high standards of food service are maintained at all times;
• Collecting and acting on customer feedback to improve the overall running of the restaurant;
• Liaising with the Licensee and Venue Manager to ensure smooth service at all times;
• Stock management including undertaking regular stock checks, placing orders with suppliers’ deliveries and stock handling;
• Meeting kitchen revenue targets agreed with the Licensee by monitoring profitability and revenue performance on a daily basis;
• Meeting with the Licensee weekly to assess performance and set revenue and profit targets, thereby ensuring we’re meeting necessary gross profit margins on all products;
• Recruiting, training and managing kitchen staff;
• Holding weekly meetings with your team & discussing all relevant issues and maintaining staff motivation;
• Maintaining staff discipline, monitoring punctuality, uniform & performance;
• Sourcing the best prices from suppliers whilst ensuring the quality and integrity of our product range; and
• Identifying opportunities and areas to improve and develop the services and facilities the venue has to offer.
Skills & Experience – Who we’re looking for:
For this position, it is expected that you would possess the following qualifications/work experience:
• Minimum Diploma level qualification in a Hospitality related qualification
• At least 2 years of relevant experience as a Chef role within a restaurant
• Must have eye for detail
• Strong communication skills
• High standards of cleanliness & hygiene
