- Ensure cleaning and maintenance of outlets, work areas, tableware, utensils and other materials and equipment used by the restaurant.
- Regular liaison with Maintenance ensuring maintenance requests are completed quickly focusing on guest needs as a priority.
- Assist in the preparation of daily, weekly and monthly reports, commenting on key performance indicators and action taken to keep on target.
- Management and guidance of outlet staff under your control, namely Supervisors and Team Leaders.
- Prepare weekly forecasts for the restaurant and roster staff accordingly.
- Ensure constant liaison with the Conference Services department.
- Adherence to Emergency Communication procedures ensuring that enquiries from the media are only responded to by the nominated spokesperson.
- Demonstrate an understanding of stock ordering, PAR levels and stock take.
- Consistently looking at the food and beverage offerings and ways of revising them and keeping them up to date.
- Ensure cash float is counted at the start and conclusion of each use.
- Ensure that all service and brand standards are met while on shift.
