Primary Purpose:
This role is directly responsible for all kitchen functions including food purchasing, cost and labour control, preparation and maintenance of quality standards; sanitation and cleanliness; lead, manage and training kitchen team in methods of cooking, preparation and plate presentation.
Position Specifications:
Duties include being primarily responsible for and overseeing all aspects of the kitchen, including (but not limited to):
• Work alongside, guide and supervise all kitchen team members of a lower level
• Able to perform & delegate all key duties of other positions within the kitchen team
• On call for any emergencies and any unexpected store or staffing requirements
• Control kitchen expenditures (i.e. COG’s) through the development and the use of par levels for ordering/receiving and storage procedures
• Control kitchen COE through the development of people, efficient practices and management
• Maintain stock control through ordering, recording & monitoring wastage and accurate monthly stock takes
• Assist with the recruitment, selection and induction of efficient and friendly staff
• Training and ongoing development of kitchen team members
• Enforce daily and weekly systems and procedures to ensure a high level of presentation, hygiene, service, product quality and security
• Assisting the store leader to effectively discipline and praise staff as required
• Perform administrative duties in conjunction with the Store Leader (i.e. collecting invoices, recording food safety requirements)
• Ensure all menu items are available throughout the entire trading day, including through cooking
• Ensure the cleanliness of the kitchen is in alignment with Food Safety requirements and hygiene practices
Experience
• Minimum 2 years’ experience in a casual dining environment or café
Qualifications
• Certificate III Commercial Cookery or equivalent - essential
• Food Safety Supervisor Certificate - essential
• Certificate IV Commercial Cookery or equivalent - preferred
• Current First Aid Certificate(maintained by employee) - essential
• Completed Good Food Gold Academy (mandatory within 6 weeks of start date)
Knowledge
• Demonstrated knowledge of The Coffee Club policies and procedures as outlined in The Coffee Club Team Handbook and manuals
• Detailed and up to date knowledge of preparation and presentation of all meal items in accordance with the Good Food Manual
• Detailed knowledge of all kitchen operations
• Detailed knowledge of The Coffee Club mission statement and core values
• Knowledge of food safety, workplace health & safety regulations and relevant industrial relation regulations
Skills
• Ability to establish clear lines of communication with team members, Store Leader, Shift Leader/s, Franchisee/s, corporate office and suppliers
• Effective leadership and management skills
• Ability to train, guide, work hands on and alongside staff as required to ensure we provide Good Food at all times regardless of who is working in the kitchen
• Ability to communicate effectively with fellow staff and management
• Ability to assist in promoting sales by creating innovative and well-presented daily and weekly chef’s choice of meals (CBR only)
• Ability to work unsupervised

Salary - $74,000 - $80,000 plus super
