Key duties
? Prepare fondant by weighing raw materials to create mixture of appropriate consistency
? Using tools, moulds, cutters and shaping by hand, prepare fondant decorations to be used for cakes and cupcakes

? Prepare dog friendly cream and icing mixtures by weighing raw materials and mixing to appropriate consistency
? Preparing dog friendly icing to varying consistencies to enable flooding biscuits or to write on top of biscuits – with a high degree of quality and accuracy
? Decorate cakes and cupcakes with the dog friendly cream using range of piping techniques in line with customer’s personalisation request
? Decorate cakes with dog friendly icing by writing customer’s personalised message on top of cakes and cupcakes
? Cleaning of equipment, tools and other utensils used and setup of equipment for the next day
? For baking dog biscuits, you will be cutting biscuits using cutters and operating the oven to ensure they are baked as required
? Emptying the baking trays once cooled to icing trays for icing customer’s orders
Academic or trade qualifications
? You will ideally have formal training as a Pastrycook which has decorated cakes, biscuits and pastries to high degree of quality and precision.
? That said, should you have significant experience where you have obtained the appropriate skills either through on the job training or your own practicing over time that enable you obtain skills required of this role, the formal training is not required.

Work experience and skills
? Minimum 1 year experience in decorating with cream mixtures and/or buttercream icing to be able to successfully decorate cupcakes and vintage style cakes
? Minimum 2 years’ experience in using fondant to decorate
? Minimum 2 years’ experience in writing with icing (royal icing, dog icing or an equivalent mixture consistency) such that it is of a high degree of quality, accuracy and visual aesthetic

Relevant skills
? You will be well versed in using different cream and icing tips to produce different effects from decorations
? You will be experienced with writing using either dog friendly icing (yoghurt or starch based) or the human royal icing equivalent.

? You will be able to use your experience to use judgement to creating icing, fondant and cream mixtures to the appropriate level of consistency such that they do not melt, crack or ‘bleed’.
